Grated Green & Feta Salad

Makes 4 Servings|  Prep Time: 5 Min | Total Time: 5 Min

Ingredients:

  • 1 large cucumber
  • 1 large zucchini
  • 1 large green pepper
  • 2 medium spring onions
  • 2 cups feta cheese, crumbled

Dressing: 

  • 3 Tbsp extra virgin olive oil
  • 2 Tbsp freshly squeezed lemon juice
  • 2 Tbsp chopped fresh mint
  • 1/4 tsp chili flakes
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Wash and grate the cucumber and zucchini
  2. Slice them, using a julienne peeler or a spiralizer and create thin “noodles.”
  3. Wash and slice the spring onions.
  4. Add the feta Cheese.
  5. To make the dressing, mix together all the ingredients.  Pour it over the salad and combine well
  6. Let sit for 5-10 minutes before serving.
  7. Top with crispy bacon, if you like
